Publication Alert! Walailak University School of Education Lecturer Publishes International Research on Plant-Based Food Safety

The School of Education, Walailak University, is pleased to congratulate Ajarn Phatchara Phayakka, a lecturer at the School of Education, on the publication of an international research article as the First Author, entitled:

“Detection, Genomic Characterization, and Antibiotic Susceptibility of Salmonella Anatum SPBM3 Isolated from Plant-Based Meat”

The research article has been published in Foods, an international peer-reviewed journal ranked in the Q1 category with a Percentile of 99 in Food Science, reflecting the high quality and international significance of the research.

The study investigated microbiological risks associated with plant-based meat (PBM) products, focusing on the detection of Salmonella, genomic characterization using Whole Genome Sequencing (WGS), and antimicrobial susceptibility testing. The research aimed to provide a deeper understanding of the characteristics of the isolated bacteria, including antimicrobial resistance and virulence-related factors.

The findings identified Salmonella enterica serovar Anatum in a raw plant-based meat product, while no Salmonella-positive samples were detected among the cooked PBM products examined. Genomic analysis also revealed important information regarding antimicrobial resistance genes and virulence factors, providing valuable insights for food safety surveillance.

This research highlights the importance of monitoring foodborne pathogens and antimicrobial resistance in plant-based food products, which are becoming increasingly popular among consumers. The findings can contribute to the development of effective food safety measures, strengthen microbial risk surveillance, and support consumer health protection.
